Verdicchio dei Castelli di Jesi DOC
Cantaro is a 100% Verdicchio D.O.C. wine heavy with aromas of apples and grapefruit. It is acidic, fresh and crisp like all the best Verdicchio.
Cantaro is made from selected grapes of a single year and only from one vineyard. The grapes are fermented in temperature-controlled stainless steel vats where the ancient practice of “battonage” is carried out-this involves stirring the lees (the leftovers of the yeast added earlier) to give the wine a better nose and flavour. Fermentation lasts about 7 to 10 months.
The name Cantaro comes from the ancient pottery found in the fields while preparing the land for the vines.
Asco is an intense dark red colour with aromas of blackberry jam and currants. Made from a 50:50 blend of Syrah and Merlot Asco has strong notes of dark fruit with some spice in the finish.
The grapes, all from same vineyard, are harvested in small boxes of 25k avoiding putting one on top of the other which would crush the grapes. Once in the cantina the grapes are pressed and the must is put in wood barrels for 5/10 days. During this period about 10 times a day the winemakers stir the wine which allows the skins to impart more flavour and aroma to the wine.
When fermentation is complete the wine without the skins is transferred to stainless steel vats for 4/5 months and then to barriques (a special type of wooden barrel) for 2/3 months for further maturing.
Like Cantaro this wine is named after fragments of ancient pottery found in the fields while preparing the land for the vines.
