Visciolata del Cardinale is a beguiling blend of sun-dried visciole sour cherries and Cabernet Sauvignon grapes. Fermented together the cherries and grapes produce a deep red liquid, wonderfully cherry-scented and with a lovely cherry edge to its red wine flavour. Its aroma gives Visciolata an initial sweetness but the lingering finish is dry and smooth as the sourness of the cherries and the tannin of the grapes assert themselves.
Though its natural partner is anything chocolatey Visciolata goes well with cheese, cheese-cake or ice cream. In cocktails it will enhance any spirit with its colour, aroma and flavour. Use Visciolata in a kir royal instead of cassis or for a delicious twist on an americano substitute Visciolata for vermouth.
