Acquavite del Cardinale is an ethereal distillation of grape residue and sour cherries. The grapes are Cabernet Sauvignon, the cherries are visciole and the water is from Monte Nerone. This precious gem with its interlaced ingredients is like a delicate crystal-clear slice of almond tart, the almond taste deriving from the crushed cherrystones. With a 40% abv it is fiery but the sweetness and flavour remove any aggressiveness.
The Aquavite is made in the slow old-fashioned way using a bain-marie or double-boiler. This prevents impurities contaminating the product and enhances its flavour.
As a digestif it is a perfect way to conclude a meal. Acquavite del Cardinale is also a unique cocktail ingredient opening the door to some stunning cocktails.
